Clam Cakes

Quick answer

Fold chopped clams and their juice into a simple baking powder batter with egg and milk. Drop spoonfuls into 350 F oil and fry 2 to 3 minutes, turning once, until deep golden and crisp. Drain on a rack, season with salt and serve hot with chowder or tartar sauce. Makes about 16 cakes.

Golden brown clam cakes piled on a plate with lemon wedges and tartar sauce

Clam Cakes are Rhode Island’s gift to fried food lovers. Chopped clams get folded through a simple puffy batter and fried into golden nuggets that are crisp outside, tender inside and unmistakably of the sea. Dunk them in chowder, drag them through tartar sauce, eat them standing up; there is no wrong way.

Why you’ll love it

  • Pantry friendly: canned clams, flour and oil are the whole ingredient list.
  • From bowl to plate in about 35 minutes, faster than takeout.
  • The classic chowder companion, made for dunking.
  • Puffy, golden and crisp with clam in every single bite.
  • Tastes like a summer shack on the Rhode Island coast.

Ingredient notes

Chopped clams: canned and proud of it. The canning liquid is flavor, so reserve it all and build the batter on it. Chop the meats a touch finer for even distribution.

Baking powder: the lift that makes them puff instead of lying flat. Check the date; old powder gives dense, sad cakes.

Whole milk: just enough richness to keep the crumb tender. The clam juice does the heavy flavor lifting.

Fresh parsley: the green fleck that keeps the rich fritters tasting fresh. Chives work too.

Neutral oil: peanut or vegetable, held at 350 F. Flavorless oil lets the clam shine.

The thick batter and hot oil rule that makes or breaks it

Two rules decide clam cakes, and both are about structure. First, the batter must be thick enough to hold its shape on the spoon. Thin batter hits the oil and spreads into flat, greasy discs; thick batter puffs into golden nuggets with a tender center. If your batter looks pourable, fold in flour a spoonful at a time. Second, the oil must hold 350 F through every batch. Oil temperature is the entire difference between crisp and greasy, and a crowded pot drops it fast. Fry five or six at a time, let the oil recover, and every cake comes out puffed, golden and shattering crisp.

Variations

  • Old bay clam cakes: add a teaspoon of old bay to the dry ingredients for a Chesapeake accent.
  • Corn clam cakes: fold in 1/2 cup of fresh corn kernels with the clams for sweet pops.
  • Jalapeno clam cakes: add a minced jalapeno to the batter for a gentle background heat.
  • Mini clam cakes: fry teaspoon sized cakes for 90 seconds for party friendly bites.

What we learned testing it

  • Clam juice in the batter beat plain milk clearly. The milk only batch tasted like generic fritters; the clam juice batch tasted unmistakably of the sea.
  • Chopping the clams finer fixed the texture problem. The whole piece batch had rubbery pockets and uneven bites; the chopped batch was tender throughout.

Ingredients

Equipment

Large mixing bowl · Heavy pot or deep fryer · Thermometer · Slotted spoon or spider · Wire rack over sheet pan

Instructions

  1. Chop the clams fine

Drain the clams, reserving all the juice. Chop the clam meats a little finer than they come from the can; smaller pieces distribute through the batter instead of sinking into pockets. You want clam in every bite, not a treasure hunt.

  2. Mix the fritter batter

Whisk the flour, baking powder, salt and pepper in a large bowl. In a second bowl, whisk the egg, milk and 1/2 cup of the reserved clam juice. Pour the wet into the dry and stir just until combined, then fold in the chopped clams and parsley. The batter should be thick enough to hold a spoonful shape.

  3. Fry until deep golden

Heat 2 inches of oil to 350 F. Drop heaping tablespoons of batter into the oil, 5 or 6 at a time, and fry 2 to 3 minutes, turning once, until puffed and deep golden all over. Do not crowd the pot; the temperature must recover between additions.

  4. Drain and serve hot

Lift the cakes out with a spider and drain on a wire rack, seasoning with salt while they are still glistening. Serve within minutes with lemon wedges and tartar sauce, or floating in a bowl of clam chowder the Rhode Island way.

Notes

  • Use some of the reserved clam juice in the batter. Water or plain milk dilutes the clam flavor; the juice doubles it.
  • Keep the batter thick. A thin batter spreads into flat greasy discs; a thick one puffs into golden nuggets.
  • Fry at a true 350 F. Too cool and they drink oil; too hot and the outside burns before the center sets.
  • Serve immediately. Clam cakes wait for no one, and their crisp crust softens within 15 minutes.
  • No protein claims here; these are a seaside treat, best eaten hot with chowder and zero regrets.

Frequently asked questions

What are clam cakes?

Clam cakes are Rhode Island's beloved fritters: chopped clams folded into a baking powder batter and deep fried into golden, puffy nuggets. They are the traditional partner to clam chowder, often served floating right in the bowl.

Are clam cakes the same as clam strips?

No. Clam strips are breaded strips of clam fried on their own, a Howard Johnson era classic. Clam cakes are batter fritters with the clam chopped and mixed through, soft inside and crisp outside.

Can I bake clam cakes instead of frying?

You can bake scoops at 400 F for about 15 minutes, but they will be denser and paler, more like savory muffins. The crisp puffed crust only comes from frying.

Why are my clam cakes greasy?

The oil temperature dropped too low, usually from overcrowding. Fry small batches at a steady 350 F and let the oil recover between rounds.

What do you serve with clam cakes?

In Rhode Island they go straight into clam chowder or alongside it with lemon and tartar sauce. They also make a great appetizer with cocktail sauce or a cold beer.
